Ingredients
| – 1 cup almond flour (or egg white/lupin flour for true zero carb) – 1 tbsp ground psyllium husk – 1 tsp baking powder – 1/4 tsp sea salt – 4 large eggs – 1/2 cup full-fat plain Greek yogurt – 1 tbsp apple cider vinegar Optional: garlic powder, herbs, cheese, cinnamon, or sweetener |
Instructions
1. Preheat oven to 350°F (175°C). Line or grease an 8×4″ loaf pan.
2. In a bowl, combine almond flour, psyllium husk, baking powder, and salt.
3. In another bowl, whisk eggs, yogurt, and vinegar. Mix with dry ingredients.
4. Pour batter into loaf pan. Smooth the top.
5. Bake 35–40 minutes, until golden and a toothpick comes out clean.
6. Cool completely before slicing.
Notes
For fluffier texture, use egg white powder instead of almond flour. Let loaf cool fully before slicing to avoid gumminess. Refrigerate or freeze sliced for best storage.
