- 2 pounds beef chuck, cut into cubes
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 can (14 ounces) coconut milk
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup frozen peas
Instructions
- Heat the oil in a skillet over medium heat. Add the onions and sauté until translucent.
- Add garlic and ginger, and cook for another minute.
- Stir in the curry powder and garam masala, cooking until fragrant.
- Transfer the mixture to the slow cooker, adding the beef, coconut milk, diced tomatoes, salt, pepper, and beef broth.
- Cook on low for 6-8 hours or high for 4 hours until beef is tender.
- Stir in frozen peas during the last 30 minutes of cooking.
- Serve hot with rice or naan.
Notes
- This dish can be made up to 2 days in advance and stored in the refrigerator.
- Great for leftovers and can be frozen for up to 3 months.
- Adjust the spice levels as needed, adding more chili if you prefer it spicier.
