  • 1/2 cup breadcrumbs
  • 1/4 cup green onion, chopped
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 avocado, ripe
  • 1 tablespoon lime juice
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the flaked salmon, breadcrumbs, green onion, beaten egg, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes, or until golden brown and cooked through.
  5. While the salmon balls are baking, prepare the avocado sauce by blending the avocado, lime juice, Greek yogurt, and cilantro until smooth.
  6. Serve the salmon balls warm with the creamy avocado sauce on the side.
