- 1 pound salmon fillets, cooked and flaked
- 1/2 cup breadcrumbs
- 1/4 cup green onion, chopped
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 avocado, ripe
- 1 tablespoon lime juice
- 1/4 cup Greek yogurt
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the flaked salmon, breadcrumbs, green onion, beaten egg, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
- Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown and cooked through.
- While the salmon balls are baking, prepare the avocado sauce by blending the avocado, lime juice, Greek yogurt, and cilantro until smooth.
- Serve the salmon balls warm with the creamy avocado sauce on the side.
Notes
- For a spicier sauce, add a pinch of cayenne pepper to the avocado mixture.
- You can substitute the salmon with canned salmon for convenience.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
