Key Ingredients for Pumpkin Spice Latte Cake

Self-Raising Flour: When crafting the perfect pumpkin spice latte cake, self-raising flour is essential. Its leavening agents create a light and fluffy texture, allowing the flavors to shine through seamlessly. If you don’t have any on hand, simply combine all-purpose flour with a bit of baking powder.

Pumpkin Spice Mix: The heart of this cake is the pumpkin spice mix. A blend of cinnamon, nutmeg, ginger, and cloves, it brings warmth and depth to every bite. I recommend using a high-quality mix or making your own for a fresher flavor.

Vegetable Oil: To ensure our pumpkin spice latte cake remains tender and moist, vegetable oil is the go-to ingredient. It complements the pumpkin perfectly while enhancing the cake’s overall richness.

Eggs: Eggs are the binding force in our recipe, providing structure and moisture. I typically use large eggs to give the cake a sturdy yet soft base.

Light Brown Sugar: For that distinct caramel-like sweetness, I swear by light brown sugar. It adds a hint of molasses flavor that beautifully complements the spices.

Instant Coffee Granules: To channel that classic latte vibe, instant coffee granules are a must. They deepen the cake’s flavor profile without overpowering the pumpkin.

Unsalted Butter: Incorporating unsalted butter helps create a rich, flavorful batter. Its creamy texture doesn’t just contribute taste; it also aids in developing the cake’s crumb.

Full-Fat Cream Cheese: For the frosting, full-fat cream cheese brings a tangy richness that pairs beautifully with the sweet cake underneath. It ensures our pumpkin spice latte cake offers that delightful contrast of flavors.

These ingredients come together symphoniously, making every slice as comforting as your favorite coffee shop treat!

Variations of Pumpkin Spice Latte Cake

Exploring the world of pumpkin spice latte cake opens a realm of delicious possibilities that can elevate your baking game. Each variation adds a unique twist to the classic recipe, bringing in flavors that rejuvenate the familiar pumpkin spice experience.

Nutty Delight

Add a layer of crunch by incorporating chopped pecans or walnuts into the batter. The nuts not only provide texture but also pair well with the warm spices, enhancing the overall flavor profile while giving a delightful bite.

Cream Cheese Swirl

For a tangy twist, try mixing in a cream cheese swirl. Blend cream cheese with sugar and a splash of vanilla extract, then swirl it into your batter before baking. The result? A moist cake complemented by rich, creamy pockets that burst with flavor.

Vegan Pumpkin Spice Latte Cake

If you’re seeking a plant-based alternative, substitute eggs with flaxseed meal or applesauce and use almond milk instead of dairy. The spices and pumpkin still shine through, proving that you don’t have to sacrifice flavor for dietary preferences.

Spice It Up

Looking to amp up the flavor? Consider adding a teaspoon of cardamom or nutmeg to the mix. These spices add a complementary warmth, making each bite even cozier and perfect for chilly autumn evenings.

Whichever variation you choose, your pumpkin spice latte cake is sure to impress family and friends, creating delicious memories with every slice.

Cooking Tips and Notes for Pumpkin Spice Latte Cake

Creating the ultimate pumpkin spice latte cake is a wonderfully savory journey where rich flavors and warm spices combine in perfect harmony. Here are some essential tips to enhance your baking experience and ensure that every slice embodies the comforting essence of autumn.

Use Fresh Pumpkin for Depth of Flavor

While canned pumpkin puree is convenient, I find that using fresh pumpkin delivers a richer taste and a smoother texture. Roasting your own pumpkin enhances its natural sweetness and flavor. Simply cut it in half, scoop out the seeds, roast until tender, and puree!

Choose the Right Coffee

For a true pumpkin spice latte cake, the coffee flavor shines through, so opt for a good-quality brewed coffee. If you have espresso on hand, it works beautifully too. Just be sure to let it cool before adding it to the batter; this helps maintain the cake’s structure.

Don’t Overmix the Batter

One of the most common mistakes is overmixing the batter. Mix until the ingredients are just combined to ensure a tender, fluffy texture. Nobody likes a dense cake!

Spice it Up!

Adjust the spices based on your personal preference! If you’re a cinnamon lover, feel free to add a touch more cinnamon, or even experiment with nutmeg or ginger for an extra kick. Remember, spices strengthen over time, so don’t go too heavy unless you’re ready for the bold flavor.

Frosting Variations

While cream cheese frosting pairs beautifully with a pumpkin spice latte cake, consider a whipped maple frosting for a unique twist. Just mix maple syrup into your basic frosting, or whip up some heavy cream with a dash of vanilla and a drizzle of maple for a light topping.

By following these tips, your pumpkin spice latte cake will be a showstopper, perfect for gatherings or cozy nights in! Happy baking!

Description

This delicious pumpkin spice cake is perfect for autumn!

Ingredients

Scale
  • 300 g Self raising flour
  • 2 tbsp Pumpkin spice mix
  • 300 ml Vegetable oil
  • 3 large Eggs
  • 2 tsp Vanilla extract
  • 300 g Light brown sugar
  • 250 g Pumpkin puree
  • 1 tbsp Instant coffee granules
  • 0.5 tbsp Boiling water
  • 200 g Unsalted butter
  • 400 g Icing sugar
  • 200 g Full-fat cream cheese

Instructions

  1. Preheat the oven to 160° fan / 180° conventional. Grease and line the base and sides of two 7-inch round cake tins with baking paper.
  2. In a large bowl, stir the flour and pumpkin spice mix together to combine.
  3. In a separate bowl, whisk the vegetable oil, eggs, vanilla extract and brown sugar together until well combined. Then whisk in the pumpkin puree.
  4. Pour the wet ingredients into the dry ingredients, and whisk to combine.
  5. Divide the mixture evenly between the cake tins. Bake for 45-50 minutes until risen, golden in colour and the middle of the sponge springs back when lightly pressed. Leave to cool in the tins for 15 minutes, then turn out onto a wire rack to cool completely.
  6. First dissolve the instant coffee granules in 0.5 tbsp boiling water and place in the fridge to cool for 10 minutes.
  7. Beat the butter until soft and pale in colour. Beat in the icing sugar in two stages until the buttercream is smooth and combined. Then fold in the cooled coffee liquid.
  8. Add the cold cream cheese and gently fold it in to make a smooth and creamy frosting. Be careful not to over-mix as this can cause the cream cheese to loosen and become runny. If your frosting is too thin, place the bowl in the fridge for 30 minutes to firm up.
  9. Place one cake layer on a cake stand or plate. Top with half of the frosting and sandwich the second layer on top. Spread the remaining frosting on top and finish by adding any decorations you like!
