Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup sliced mushrooms
  • 1 cup bok choy, chopped
  • 1 package potstickers (about 12-16)
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon fresh ginger, grated

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add onions and garlic and sauté until soft.
  2. Pour in the chicken broth and water, then bring to a boil.
  3. Add mushrooms, bok choy, potstickers, soy sauce, sesame oil, and ginger. Reduce heat and simmer for about 10 minutes.
  4. Serve hot, garnished with sliced green onions.

Notes

  • For a spicy kick, add red pepper flakes or sriracha.
  • You can use frozen potstickers for convenience.
  • Feel free to add more vegetables like carrots or peas.
