Ingredients

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup water
- 1 cup sliced mushrooms
- 1 cup bok choy, chopped
- 1 package potstickers (about 12-16)
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- 2 green onions, sliced
- 1 tablespoon fresh ginger, grated
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add onions and garlic and sauté until soft.
- Pour in the chicken broth and water, then bring to a boil.
- Add mushrooms, bok choy, potstickers, soy sauce, sesame oil, and ginger. Reduce heat and simmer for about 10 minutes.
- Serve hot, garnished with sliced green onions.
Notes
- For a spicy kick, add red pepper flakes or sriracha.
- You can use frozen potstickers for convenience.
- Feel free to add more vegetables like carrots or peas.
