- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 pound potato gnocchi
- 1 cup frozen peas
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned.
- Add carrots, celery, and garlic; sauté for 2-3 minutes.
- Pour in the chicken broth and bring to a boil.
- Add gnocchi and thyme, then reduce heat and simmer until gnocchi is cooked through.
- Stir in peas and heavy cream; cook until heated through.
- Season with salt, pepper, and garnish with parsley before serving.
Notes
- This dish can be made ahead and reheated. Just add a little more broth when reheating.
