Ingredients

  • 1 pound chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 pound potato gnocchi
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned.
  2. Add carrots, celery, and garlic; sauté for 2-3 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add gnocchi and thyme, then reduce heat and simmer until gnocchi is cooked through.
  5. Stir in peas and heavy cream; cook until heated through.
  6. Season with salt, pepper, and garnish with parsley before serving.
