- 1 cup graham cracker crumbs
- 4 tablespoons melted butter
- 2 tablespoons sugar
- 16 ounces cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar.
- Press mixture into the bottom of mini cheesecake pans.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs, vanilla extract, and ground cinnamon, mixing until well combined.
- Pour mixture over the crusts in the mini pans.
- Bake for 20-25 minutes, or until set.
- Let cool and refrigerate for at least 2 hours before serving.
Notes
- These can be topped with whipped cream and a sprinkle of cinnamon for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
