  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 2 large eggs

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar.
  3. Press mixture into the bottom of mini cheesecake pans.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs, vanilla extract, and ground cinnamon, mixing until well combined.
  6. Pour mixture over the crusts in the mini pans.
  7. Bake for 20-25 minutes, or until set.
  8. Let cool and refrigerate for at least 2 hours before serving.
