Key Ingredients for Marry Me Chicken Soup
Chicken Breast: For a heartwarming Marry Me Chicken Soup, I prefer using boneless, skinless chicken breasts. They provide lean protein and absorb the flavors of the broth beautifully. If you’re in a hurry, rotisserie chicken also works as a convenient alternative.
Vegetables: Fresh celery, carrots, and onions are essential. These aromatics lay a solid flavor foundation, blending perfectly with the chicken while adding essential vitamins. Dicing them evenly ensures a consistent texture throughout the soup.
Garlic: Fresh garlic is a must in this recipe. It adds depth and that irresistible aroma that fills your kitchen. For an extra flavor kick, feel free to sauté the garlic before adding it to the soup.
Chicken Broth: I recommend using low-sodium chicken broth for better control of flavor. Homemade broth adds a unique touch, but store-bought works just fine when time is tight.
Herbs and Spices: A mix of thyme, basil, and a pinch of red pepper flakes gives the soup warmth and complexity. These ingredients create a cozy atmosphere, making this dish truly marry-ready.
Cream: Adding a splash of heavy cream at the end enhances the soup’s richness and smoothness, transforming it into a comforting bowl of love. For a lighter option, coconut milk could also work wonderfully.
Bowls of this soup are perfect for cozy nights in or impressing a special someone at dinner. With these ingredients, you’re well on your way to creating a dish people will fall in love with!

Cooking Tips and Notes for Marry Me Chicken Soup
Creating the perfect Marry Me Chicken Soup is all about attention to detail and personal flair. This heartwarming recipe is not just about combining ingredients; it’s about crafting a bowl of comfort that speaks to the soul.
Choosing the Right Chicken
I recommend using boneless, skinless chicken thighs for this dish. They stay juicy and tender during cooking, enhancing the soup’s overall richness. If you prefer a lighter option, chicken breasts work, but be mindful not to overcook them to avoid dryness.
Vegetables That Shine
Fresh vegetables are key! Carrots and celery not only contribute flavor but also add a beautiful color to your soup. Don’t be shy about adding your favorite seasonal veggies—things like spinach or zucchini could make delightful additions.
The Perfect Broth
A homemade stock is ideal if you have the time, but store-bought low-sodium chicken broth can save the day when you’re in a pinch. The flavor differences between the two are noticeable; homemade offers a depth that elevates your Marry Me Chicken Soup to another level.
Seasoning with Love
When it comes to spices, go for freshness. Dried herbs can be convenient, but using fresh thyme or parsley will add brighter notes. Remember to taste as you cook; a pinch more salt or a dash of pepper can make a world of difference.
Crafting this special soup is about more than just eating; it’s about creating something you adore and want to share. Now, get to cooking and enjoy every spoonful!

Marry Me Tuscan Chicken Soup
- Total Time: 50 mins
- Yield: 10 cups 1x
- Diet: Gluten-Free
Description
Listen, if this soup doesn’t put a ring on it, I don’t know what else will. I first made this soup for my husband back when we were just dating. He thought I spent hours making it, when it’s actually a simple one-pot recipe. The rich cream sauce was the game-changer. I’m talking about raising the bowl just to drink the leftover sauce! He still can’t get enough of this when I make it, and doesn’t know it’s easy to throw together.
Ingredients
- 1 teaspoon olive oil
- 1 – 1 ½ pounds boneless, skinless chicken breasts or thighs, diced into 1-inch pieces; I used 1 ½ pounds.
- 2 teaspoons Italian Seasoning, divided
- salt and pepper to taste
- ½ cup diced carrots
- ½ cup diced celery
- ½ cup diced onions
- ¼ cup diced sundried tomatoes
- 3 garlic cloves, minced
- ¼ cup flour
- 2 tablespoons tomato paste (optional)
- 6–8 cups chicken broth; I recommend starting with 6 cups.
- 6 oz pasta; I used Italian small shells.
- 1 cup heavy whipping cream
- ½ – 1 cup grated parmesan reggiano cheese
- 2 ½ – 3 cups fresh spinach
Instructions
- Heat the olive oil in a large soup pot or Dutch oven over medium-high heat. Add the chicken and 1 teaspoon of Italian seasoning, salt and pepper to taste, and cook until browned on all sides, about 4-5 minutes.
- In the same pot, add the onions, carrots, celery, sundried tomatoes, and garlic and cook until translucent, about 3-4 minutes.
- Sprinkle the flour throughout and stir well to combine. If you plan to add tomato paste, add it here and stir.
- Gradually whisk in the chicken broth and stir repeatedly, ensuring there are no lumps. Deglaze the bottom of the pan using your spoon.
- Bring the mixture to a rolling boil and add in the pasta and 1 teaspoon of Italian seasoning, salt, and pepper to taste. Cover the pot with the lid and lower the heat to low to let the soup simmer for about 20 minutes, or until the chicken is cooked through and tender, and the pasta is al dente. Alternatively, you can boil the pasta separately and add it at the end.
- Open the pot and stir in the heavy cream, spinach, and grated Parmesan cheese, and let the soup simmer for an additional 5 minutes.
- Taste and adjust the seasoning with salt and spices if needed.
Notes
- For an easy shortcut, consider using pre-chopped vegetables.
- If you want to reduce calories, you can use lean chicken breasts instead of thighs.
- You can freeze leftovers, just omit the heavy cream until reheating to prevent curdling.
