Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, diced
  • 1 cup zucchini, sliced
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 3 cups white sauce (Alfredo or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté mushrooms, bell peppers, and zucchini until tender.
  4. In a bowl, mix ricotta cheese with garlic powder and onion powder.
  5. Spread a layer of white sauce in the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, and a layer of mozzarella cheese.
  7. Add another layer of white sauce.
  8. Repeat the layers, finishing with a layer of noodles, remaining white sauce, mozzarella, and parmesan cheese on top.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 15 minutes, until golden and bubbly.
  11. Let it cool for a few minutes before slicing and serving.
