Packed with all the bold flavors of a jalapeño popper—spicy jalapeños, crispy bacon, creamy cheese—this salad swaps the fried shell for cool, hydrating cucumbers. It’s perfect for summer picnics, BBQs, potlucks, or even a low-carb weeknight dinner.

  • 4 cups cucumbers, thinly sliced (English or Persian preferred)

  • 3 fresh jalapeños, finely diced (seeds removed for less heat)

  • 6 slices bacon, cooked until crispy and crumbled

  • ½ cup shredded cheddar cheese

  • 4 oz cream cheese, softened

  • ¼ cup sour cream

  • ¼ cup mayonnaise

  • 1 tbsp apple cider vinegar

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • Optional: chopped chives or green onions for garnish


Instructions

Step 1: Prepare the Cucumbers

Wash and thinly slice the cucumbers using a sharp knife or mandoline. If using English cucumbers, there’s no need to peel them. Pat them dry with a paper towel to remove excess moisture.

Step 2: Cook the Bacon

In a skillet over medium heat, cook bacon strips until crispy. Drain on paper towels and once cool, crumble into small pieces. Set aside.

Step 3: Make the Dressing

In a medium bowl, mix together the softened cream cheese, mayonnaise, sour cream, apple cider vinegar, garlic powder, and onion powder. Stir until smooth and creamy. Season with salt and black pepper to taste.

Step 4: Combine the Salad

In a large mixing bowl, add sliced cucumbers, diced jalapeños, shredded cheddar cheese, and most of the bacon (reserve a bit for topping). Pour the creamy dressing over and toss everything until well-coated.

Step 5: Chill and Serve

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to let the flavors meld. Before serving, top with the remaining bacon and optional chopped chives or green onions for color and flavor.
