Ingredients

- 1 rack of lamb
- 2 cups fresh herbs (parsley, rosemary, thyme)
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 2 tablespoons Dijon mustard
- 3 tablespoons olive oil
- salt to taste

Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the herbs, garlic, breadcrumbs, olive oil, salt, and pepper.
- Season the rack of lamb with salt and pepper, then brush with Dijon mustard.
- Press the herb mixture onto the lamb to form a crust.
- Place the rack in a roasting pan and roast for about 25-30 minutes for medium-rare.
- Let it rest for 10 minutes before slicing and serving.
Notes
- For extra flavor, marinate the lamb overnight with herbs and garlic.
- Serve with roasted vegetables or a side salad.
