Ingredients

  • 2 cups fresh herbs (parsley, rosemary, thyme)

  • 1/2 cup breadcrumbs
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the herbs, garlic, breadcrumbs, olive oil, salt, and pepper.
  3. Season the rack of lamb with salt and pepper, then brush with Dijon mustard.
  4. Press the herb mixture onto the lamb to form a crust.
  5. Place the rack in a roasting pan and roast for about 25-30 minutes for medium-rare.
  6. Let it rest for 10 minutes before slicing and serving.
