Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup grated carrots
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix grated carrots, applesauce, honey or maple syrup, and vanilla extract.
  4. Combine wet and dry ingredients until well mixed.
  5. Fold in walnuts and raisins if using.
  6. Scoop tablespoons of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until golden brown.
  8. Allow to cool before serving.
