Ingredients

- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup grated carrots
- 1/4 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine rolled oats, flour, baking soda, cinnamon, and salt.
- In another bowl, mix grated carrots, applesauce, honey or maple syrup, and vanilla extract.
- Combine wet and dry ingredients until well mixed.
- Fold in walnuts and raisins if using.
- Scoop tablespoons of dough onto a lined baking sheet.
- Bake for 10-12 minutes until golden brown.
- Allow to cool before serving.

- Store in an airtight container for up to a week.
- Can be frozen for longer storage.
