Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups cooked quinoa
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes, until cooked through.
  5. While meatballs are baking, prepare quinoa according to package instructions.
  6. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, olives, and feta cheese.
  7. Once meatballs are done, add them to the quinoa mixture and toss gently to combine.

Notes

  • These meatballs can also be made ahead of time and frozen for a quick meal later.
  • Serve the bowls with a drizzle of olive oil and a sprinkle of additional feta cheese for extra flavor.
