Ingredients

  • 8 ounces rotini pasta
  • 2 cups fresh corn kernels (or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine corn, tomatoes, red onion, and cilantro.
  3. Add the cooled pasta to the bowl.
  4. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
