Cheesy Mediterranean Quesadilla

Description

A delicious and easy-to-make quesadilla filled with Mediterranean flavors.


Ingredients

  • 1 cup shredded mozzarella cheese
  • 1 cup spinach
  • 1/2 cup diced tomatoes
  • 1/4 cup feta cheese
  • 4 tortillas
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half the mozzarella cheese over it.
  3. Add spinach, tomatoes, and feta cheese on top of the mozzarella.
  4. Top with another tortilla and cook until golden brown.
  5. Flip the quesadilla and cook the other side until golden brown and cheese is melted.
  6. Remove from skillet and cut into wedges before serving.

Notes

  • Feel free to add other vegetables like bell peppers or olives.
  • Can be served with tzatziki sauce for dipping.
