A delicious and easy-to-make quesadilla filled with Mediterranean flavors.
Ingredients

- 1 cup shredded mozzarella cheese
- 1 cup spinach
- 1/2 cup diced tomatoes
- 1/4 cup feta cheese
- 4 tortillas
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half the mozzarella cheese over it.
- Add spinach, tomatoes, and feta cheese on top of the mozzarella.
- Top with another tortilla and cook until golden brown.
- Flip the quesadilla and cook the other side until golden brown and cheese is melted.
- Remove from skillet and cut into wedges before serving.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- Can be served with tzatziki sauce for dipping.
