  • 1 small tomato
  • 1/2 avocado

Instructions

  1. In a bowl, beat the eggs with salt and pepper.
  2. Melt the butter in a large enough non-stick frying pan over medium heat.
  3. Place the slices of cheese, pour the eggs on top.
  4. Dip one side of the bread slices in the egg, flip and place on top of the cheese slices.
  5. Let the eggs set. With a large spatula flip the egg/bread to cook the other side.
  6. Place tomato, avocado and lettuce on top of the bread.
  7. Fold in the sides of the frittata on top of bread.
  8. And fold in half, making into a sandwich.

  • Beat the eggs in a bowl with all the seasoning you like (I just used salt and pepper). Depending again on the size of your pan you can use two or three large eggs. I think 3 is the best choice!
  • Make sure to dip both sides of the bread in the eggs, so when you flip it, it will look delicious on the back side too. And let the egg set as much as possible, so turning the sandwich over will be easier … it’s the only hard step in the process. If by any chance it breaks when turning … no problem. You will fold the eggs in, so no one will notice!
