- 4 lbs beef short ribs
- 2 cups red wine
- 1 onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 lbs potatoes, peeled and cubed
- 1/2 cup heavy cream
- 4 cloves garlic, roasted
- 2 tbsp butter
Instructions
- Preheat the oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
- Add chopped onion, carrots, and minced garlic to the pot and sauté until softened.
- Pour in the red wine and scrape the bottom of the pot to deglaze.
- Add beef broth and bring to a simmer.
- Cover and transfer to the oven, cooking for 3 hours until the meat is tender.
- Meanwhile, boil the potatoes in salted water until tender, then drain.
- In a bowl, mash the potatoes with heavy cream, roasted garlic, and butter until smooth.
- Serve the short ribs over the garlic mash, spooning the sauce over the top.
Notes
- For best results, let the short ribs rest for 10 minutes before serving.
- Pair with a glass of the same red wine used in the recipe.
- This dish can be made a day ahead and reheated for better flavor.
